At the U of U, we are aware that there are numerous faculty members and graduate students who are interested in food-related issues. Simultaneously, there are a number of nonprofit organizations and government entities that address food issues in our communities. Yet, because we are scattered across campus and across the valley, we may be missing important opportunities for collaboration and the sharing of information. We are hoping to change that.
The University of Utah's College of Social and Behavioral Science, the College of Health, and the Office of Sustainability, have provided seed money to support linking individuals interested in food studies on campus and in the larger community. The larger goal of this seed project is to foster interdisciplinary food-related research and teaching collaborations that move the field forward and improve access to healthy foods in our own community.
